Dark Chocolate Chip Pretzel Cookies

2 sticks salted butter
2 cups (250 g) AP flour
1 tsp. baking soda
1 cup (215 g) dark brown sugar
⅓ cup (73 g) granulated sugar
2 large eggs, room temp
2 tsp. vanilla extract or paste
1 cup chocolate covered pretzels, chopped
1½ cups (216 g) chocolate chips
Flaky sea salt

Step 1: Brown butter in a saucepan over medium heat, stirring until foamy and golden. Transfer to a large bowl and let cool.

Step 2: Whisk flour, baking soda, and salt in a bowl.

Step 3: Beat brown butter with brown and white sugar until smooth. Add eggs and vanilla; beat until light. Mix in dry ingredients, then fold in crushed pretzels and dark chocolate. Let dough rest for 30 mins.

Step 4: Preheat oven to 375°F. Scoop dough onto a parchment-lined sheet, spacing apart. Sprinkle with flaky salt.

Step 5: Bake until edges are golden and centers soft ~ 8-10 mins. Cool on sheet, then transfer to a rack.
